- What would your last meal be?
- Battered haddock and chips cooked in beef dripping served with a pickled egg, slices of crusty bread & butter, mushy peas with mint sauce and a nice pint of ale.
- What is your most memorable food experience?
- I have two; one is cooking for HM The Queen which was an amazing honour although I scalded my hand with the nut brown butter which went with the fish course, and my best eating experience has to be mine and Patrick’s recent gastro tour last year to New York.
- What is most likely to ruin your evening when dining out?
- Poorly cooked food or slow service. Either one will result in my having to have a word or two with the manager and if the service has been really bad, I have been known to leave a restaurant.
- What is the most disgusting thing you’ve ever eaten?
- Lambs’ testicles. I am game for laugh, but shouldn’t have believed my business partner when he assured me they taste quite nice. They really don’t!
- Who or what inspired your career in the food industry?
- Keith Floyd with his cavalier approach to cooking and slurping. I just loved him to bits.
