- Heston Blumenthal’s tasting menu at the Fat Duck in Bray which was incredible
- What is most likely to ruin your evening when dining out?
- Poor food and poor service.
- What is the most disgusting thing you’ve ever eaten?
- I tasted a 100 year old egg which is a Chinese delicacy made by preserving an egg in clay, ash, salt and lime. I was sick as a pig!
- Who or what inspired your career in the food industry?
- My first ever Head Chef. I was a 15 year old part time Kitchen Porter and to be honest a complete nightmare. He offered me an apprenticeship and I’ve never looked back since.
