My Mum’s delicious lamb stew with dumplings
What is your most memorable food experience?
Heston Blumenthal’s tasting menu at the Fat Duck in Bray which was incredible
What is most likely to ruin your evening when dining out?
Poor food and poor service.
What is the most disgusting thing you’ve ever eaten?
I tasted a 100 year old egg which is a Chinese delicacy made by preserving an egg in clay, ash, salt and lime. I was sick as a pig!
Who or what inspired your career in the food industry?
My first ever Head Chef. I was a 15 year old part time Kitchen Porter and to be honest a complete nightmare. He offered me an apprenticeship and I’ve never looked back since.
