Top Chef Joins H&J

It is with great excitement and anticipation that we all welcome Kevin Schofield to Harbour & Jones. Kevin has impeccable foodie credentials including time working with the Roux Brothers, Sir Terence Conran and Anton Mosimann, where he catered to the great and the good in the private dining rooms at The Belfry (Princess Diana and Sarah Ferguson amongst them apparently). He then went to New York with Compass so that he could bring the Restaurant Associates brand back to the UK and has worked for them for the last 7 years.
The reason he has joined us is that he was looking to get away from the large corporate catering companies where the most important thing is the bottom line and back into kitchens where the chefs are given freedom to source great food from small, local suppliers; to use organic produce if they can and to put the passion back into contract catering. Like us, Kevin believes in letting the quality of the ingredients speak for themselves and he knows that if you serve excellent food and can tell the story behind it, you will attract more customers. It’s not all about getting a meal on a plate for £1.20.
As our new top man in the kitchen, Kevin’s number 1 job will be to oversee the running of all our staff restaurants and working with the head chefs to develop skills and build the team across the contracts. He is currently working with Rosalind Rathouse of The Cookery School in Little Portland Street to set up a series of masterclasses for our sous chefs and chefs de partie. These will be on various topics including vegetarian food, ethnic food, sandwich making and salads and will then be expanded to other areas over the year. For the more senior chefs he will be organising demonstrations with our butcher where they will get the opportunity to get their knives into a whole carcass and really see where all the different cuts of meat come from. Plans are also in place for trips around Billingsgate and he will also be taking over the organisation of the Farm Trips, the next of which will be to a mushroom farm under the M40!
